What Is Erythritol

Erythritol — origin, structure and physical properties

Erythritol is a 4-carbon sugar alcohol (polyol) with molecular formula C&sub4;H&sub1;&sub0;O&sub4; and molecular weight 122.12 g/mol. It occurs naturally in fermented foods, fungi and fruits, but is produced industrially via fermentative biotransformation of glucose using osmophilic yeasts.

The key to erythritol's unique metabolic physiology: approximately 90% is absorbed in the small intestine — unlike xylitol or sorbitol, which are fermented in the colon — but not metabolised. It passes through unchanged and is excreted renally. Hence: GI=0, 0 kcal, minimal laxative effect.

The production process uses glucose from cereal starch fermented with the osmophilic fungus Moniliella pollinis. After filtration, demineralisation, activated carbon treatment, evaporation and crystallisation, the white crystalline powder at ≥99.5% purity is obtained.

Erythritol in keto baking — 7 key points

Erythritol is the most widely used sweetener in keto baking — but it behaves differently from sugar in several important ways. These differences determine the texture, mouthfeel and shelf life of the final product.

The most critical difference: erythritol is not a reducing sugar and does not participate in the Maillard reaction. Baked goods are paler than with sucrose. Erythritol also has a strongly endothermic heat of solution (~–40 J/g) — it creates a cooling sensation on the tongue, desirable in some applications (mint chocolate), off-putting in others (vanilla cream).

Erythritol recrystallises on cooling — frostings and glazes can turn sandy. Solution: combine with stevia extract or sucralose, which inhibit crystallisation.
